Jockey Style with Paige:
Whole Wheat Buttermilk Biscuits
Ingredients:
- 2 cups whole wheat pastry flour divided into 1 ¾ cups and ¼ cup
- 2 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 6 T grass fed cold butter cut into small pieces
- ¾ cup almond milk plus more if needed
- 2 tsp apple cider vinegar or lemon juice
Cooking instructions:
- Preheat oven to 450
- Mix milk with vinegar and let sit while making steps 3 & 4
- Combine 1 ¾ cups flour, baking powder, baking soda, and salt in a medium bowl, whisk together
- Add butter, toss with fingers to coat in flour and rapidly pinch and fluff butter into flour with your fingertips
- Make a well in ingredients and add milk, stir with fork until dough becomes one large lump
- Scrape dough onto floured surface, roll dough to coat in flour and kneed about 6 times
- Pat into rectangle and letter fold 2-3 times
- Roll out into 1 inch thick and stamp out biscuits with a cutter re-rolling excess dough as needed
- Place biscuits on ungreased baking sheet an inch apart
- Bake 10-12 minutes
Turkey Sausage Gravy
Ingredients:
- 8 oz turkey sausage
- 2 tsp olive oil
- ¼ cup Whole Wheat pastry flour
- 2 ½ cups almond milk
- seasoned salt and pepper to taste
Cooking instructions:
- Brown the sausage over medium-high heat until no longer pink
- Reduce the heat to medium-low
- Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little
- Stir it around and cook it for another minute or so
- Pour in the milk, stirring constantly
- Cook the gravy, stirring frequently, until it thickens (This may take a good 10 to 12 minutes)
- Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious
Egg and Sweet Potato Breakfast Casserole
Ingredients:
- 4 eggs, whisked
- 4 egg whites
- 1/2 chorizo, cooked and broken into pieces
- 1 sweet potato unpeeled & shredded
- ½ yellow onion, diced
- 2 T hot sauce
- 1 tsp garlic powder
- 1 tsp onion salt
- 1 tsp salt
- 1 tsp pepper
Cooking instructions:
- Preheat oven to 375
- Cook Chorizo and onion in hot skillet until it begins to crumble
- Beat Eggs and egg whites in large bowl
- Add meat, onion, and sweet potato to a bowl, then add the rest of ingredients and mix well
- Grease a 9×9 dish and add egg mixture
- Cook for 25-30 minutes until eggs aren’t runny
Cowboy Style with Joy Murray:
Biscuits
Ingredients:
- two cups self rising flour
- 3 tablespoons Mayonnaise
- 1 cup milk
Cooking instructions:
- In a medium bowl put 2 cups self rising flour
- Add 3 tablespoons Mayonnaise, stir in well
- Add a cup of milk
- Mix well
- Drop by spoonful’s on to a lightly greased cookie sheet (may prefer to roll and cut)
- Bake In a preheated oven 400 degree oven until golden brown for 8 to 10 minutes
Country gravy
Ingredients:
- 1/2 cup all purpose Flour
- 2 cups milk Milk
- 1 package Jimmy Dean hot sausage
- 3 T Oil
- salt and pepper.
Cooking instructions:
- Put 3 tablespoons of oil in a large skillet
- Add one pound Jimmy Dean sausage and brown until done
- Then sprinkle 1/2 cup flour on sausage and brown flour, brown it has almost burned, add salt for taste
- Add quite a bit of pepper and brown it with the flour
- Stir in milk until it’s the thickness you want your gravy
Egg Casserole
Ingredients:
- 1 pound hot Jimmy Dean sausage
- 1 dozen eggs
- Buenos frozen hot green chile or two small cans of chopped green Chile
- 1 can mushroom soup (10.5 oz)
- 3 cups shredded cheddar cheese
Cooking instructions:
- Brown one pound of Jimmy Dean’s hot sausage in medium skillet until done, set aside
- Scramble eggs in two tablespoons oil until almost done
- Add 4 teaspoons of green chile or two small cans of chopped green chile
- Pour sausage into a 13x9x2 baking dish
- Add scrambled eggs and spread on top
- Spread one can of mushroom soup, undiluted, on top
- Sprinkle cheese over the top
- Bake at 350 degrees for 30 minutes
