Fit Flapjacks
Ingredients
- 1 cup whole wheat pastry flour
- 2 tsp baking powder
- ½ tsp salt
- 1 T honey
- 2 T applesauce
- 1 T coconut oil melted
- 2 large eggs
- 1 cup almond milk
- 1 T vinegar or lemon juice
- Blueberries
Directions:
- Mix the vinegar or lemon juice with the almond milk and let sit
- Mix dry ingredients
- Whisk wet ingredients
- For a well in dry ingredients and add wet ingredients to dry ingredients
- Mix until incorporated but do not over mix.
- Cook in sprayed skillet (or melt coconut oil) on medium heat about 3-5 minutes on one side until no more bubbles are forming. If using blueberries add them now before you flip. Flip and cook about a minute more until done
